Hello to all .... and we hope that everyone is having a wonderful St. Patrick's Day! Everyone becomes a little Irish on this day whether you are or not. We actually celebrated on the 15th of March - and undoubtedly we are not ready to partake again so soon. We have lots of beer left, so maybe next weekend? A group of us campers here at Pio Pico all joined together at our lease site and had a great time toasting with some fine Irish Wiskey - along with lots of Guinness and Killian's Red. As the evening went along we finished up with Bailey's and Coffee. Of course, no St. Patrick's Day celebration would be complete without the Corned Beef and Cabbage - that is if you really aren't Irish! I discovered, while searching for all things Irish on the Internet, that the Irish people don't eat Corned Beef and Cabbage at all! What a disappointment! The favored dish in Ireland is called Boiled Bacon and Cabbage. Way back in Irish history, cattle were prized possessions and indicated wealth, so the only time they ate beef was when the cow became too old to produce milk or babies or was killed in an accident. Even after cattle became more plentiful, the Irish still preferred not to eat it very much. The Corned Beef came into being when they would pack beef in salt chunks the size of corn to be shipped to the U.S. and Canada. Salt Beef just didn't sound good, so they called it Corned Beef because the salt chunks reminded them of corn. Anyway, we had some Corned Beef and Cabbage - and pretended it was very Irish!
The picture below is of most of our little party. We recently purchased a new camera and it came with a program called "Stitch Assist". It is a handy little thing that takes several pictures and stitches them together into one panoranamic view. I am still learning, but I thought this wasn't too bad for a first try!
Left to right we have Lois, Jim, Jim, Andy, MJ, Helen, John and Linda. The second Jim in the picture and Helen are origionally from Scotland, but live in British Columbia Canada now. We all enjoyed their stories about Scotland and Ireland - and especially Jim's singing and dancing. Later in the evening we had three more couples join us - Diane & Ray, Darlene & Gene, and Fred & Shelia. Unfortunately, the Irish Wiskey had a pretty good hold on me by then and I neglected taking more pictures. Next time guys!
As you can see the rain had already started falling by the time we got started. As the afternoon/evening went on we experienced wind, rain and hail! Thank goodness for our cozy gazebo. Below are a few more pictures of the gathering.
We hope that everyone has had a fun and safe celebration today and maybe next year more of us can be together to celebrate the Irish in us all!
